Summary of this volume: Unhas International Conference on Agricultural Technology (UICAT 2021) was the first conference of a series held by the Department of Agricultural Technology, Universitas Hasanuddin, Makassar, Indonesia. The purpose of UICAT2021 was to provide a forum for academics, researchers, practitioners, and the general public to share their research and exchange information. Additionally, this conference fostered networking between research institutions, universities, governments, and industries on both a local and international level. The proceedings of UICAT2021 contains reviewed papers in the field of agricultural technology. The topics discussed include food chemistry, food microbiology and biotechnology, food processing and packaging, post-harvest technology, soil and water engineering, farm machinery, renewable energy, geospatial technology in agriculture, and emerging technologies in agricultural production systems. Each of the papers in the proceedings discloses new and/or development issues in the conferenceﾒs topics.
